Our first American cookie course in Sitges

The first course always has a special charm. I'd been so looking forward to this: teaching the thing we most enjoy doing every day — baking.
In this first edition we shared four of our cookies with the class:
- Classic three-chocolate cookie
- Oreo and Nutella cookie
- Red Velvet cookie filled with cheesecake
- Brownie and toffee filled cookie

The course is entirely hands-on: each student works through the whole process, from the filling to the dough and the final decoration. By the end, we want them to leave not just with spectacular cookies, but with the confidence to make them again at home.

There's quite a lot of preparation behind a course like this:
- Working out the timings and the order of each stage
- Setting up the workspace
- Putting together a booklet with everything you need to know
Getting the timings and sequence right is what keeps everything flowing without rushing or stress. Each recipe has its own resting, baking and cooling times, and fitting them into a clear sequence means students can work comfortably, enjoy the process, and see how each step leads naturally into the next.

Setting up the workspace makes a real difference too. Having every tool, ingredient and surface ready in advance makes the class quicker and more enjoyable. That way students can focus on learning and having fun, rather than hunting for things.

The booklet in particular is designed to give students enough detail to make the recipes again on their own, step by step.

It was a really special day and we couldn't be happier with how it went. We can't wait to do it again!
